My family enjoys staying healthy and we’ve recently been incorporating the keto diet into our lifestyle. The keto diet is a high fat, low carb diet that has been proven to have many health benefits. The keto diet puts your body into a metabolic state called ketosis. When your body is in ketosis it starts to burn fat for energy and turns fat into ketones which supply energy for your brain.
My favorite keto recipe is Filet Mignon with Sautéed Vegetables. It is simple to make and packed with protein, nutrients and flavor! Here is the recipe for this incredible keto meal. Feel free to switch up the vegetables and make it your own. One key to keeping up with keto is making it work for you.
2 white onions
1 lb baby portobello mushrooms
1 red bell pepper
1 yellow bell pepper
1 Fuji apple
1 stick Kerrygold butter
2 Gaughran Cattle Co. Grass Fed Fillets (Beef Tenderloin Steaks)
Sherry Cooking Wine
Preheat the oven to 170F and slice all of the vegetables.
Caramelize the onions and portobello mushrooms with one stick of Kerrygold Butter in a cast iron skillet on low heat, set them to one side in the skillet.
Increase the heat of the skillet and sear the tenderloins for 2 to 3 minutes on each side and place into the oven to keep the steaks warm.
Add a splash of sherry cooking wine to the skillet and add the rest of the vegetables. Stir and cook vegetables for 5 minutes and add salt and pepper to taste.
Add sautéed vegetables to the serving plate and place tenderloin steaks on top. Serve and enjoy!
